One of my cheap and easy dish to make at home is Fried Rice, especially if I have leftover white rice in the refrigerator. And I want to show you how easy it is to make!!

Thai Fried Rice Recipe: 2 Serving
Ingredients:
• Jasmine rice (2 cups of pre-cooked and cooled)
• Avocado Oil (2 tbsp)
• Eggs (2, beaten)
• Garlic (2 cloves, minced)
• White Onion (1, finely chopped)
• Spring onions (a handful, chopped)
• Tomatoes (2, diced)
• Lime or lemon (1, wedged)
• Chicken (100g, diced)
• Shrimp (100g, peeled)
• Soy sauce (2 tbsp)
• Salt and White pepper
Instructions:
1. Heat the Wok: Place a wok or large frying pan over medium-high heat. Add a splash of oil, swirling to coat the bottom.
2. Sauté the Aromatics: Add the minced garlic and chopped White onion to the wok, stirring until they’re just golden.
3. Protein Time: Toss in the chicken and shrimp, cooking until they’re just done. You can modify to any meat or meatless as you desire.
4. Rice and Eggs: Push the cooked ingredients to the side of the wok, pour in the beaten eggs, and scramble. Once set, mix in the cooled jasmine rice, breaking any clumps.
5. Season: Drizzle soy sauce and sprinkle a bit of salt and white pepper over the rice, mixing well to ensure even flavoring. Add diced tomatoes and spring onions, cooking for another minute
6. Final Touches: Serve hot, garnished with lime wedges for a tangy zest and slice cucumber.
Serving Suggestion:
Enjoy your Thai Fried Rice with a squeeze of lemon for an extra kick of flavor. Perfect as a meal on its own or as a hearty side dish.
Can also substitute meat with firm tofu or more veggies of your choice, like broccolis.
Leftover fried rice can be put in glass container and keep in the refrigerator for couple days.
